Grilled Romaine with Basil Goat Cheese Balsamic Dressing

WHAT YOU’LL NEED:

Salad:

  • Head of Romaine, halved lengthwise

  • High burn temp oil like Grapeseed

  • Salt & Pepper

  • 1 Fresno Pepper, thinly sliced

  • 2 TBSP crumbled goat cheese

  • Optional: grilled bell pepper and/or onion, roasted corn, or really any veggies you like!

Basil Goat Cheese Balsamic Dressing:

  • 2 TBSP EVOO

  • 1 TBSP Balsamic Vinegar

  • 1 TSP Lemon Juice

  • 1 TSP Garlic Paste

  • 1 TSP Basil Paste

  • 1 TBSP Goat Cheese Crumbles

  • Salt & Pepper to taste

How To Make It:

  1. Lightly brush the halved heads of romaine in grapeseed oil and sprinkle with S&P

  2. Grill, face down first for a few minutes on indirect grill heat, flip to back side for 1 minute then remove from grill and set aside

  3. Whisk together dressing ingredients in a small bowl

  4. Drizzle dressing over grilled romaine

  5. Top with sliced fresno pepper & goat cheese crumbles

  6. Optional—top with other grilled veggies or roasted corn to bulk it up, but it’s really lovely in it’s simplicity with just the fresno and goat cheese too!
