Grilled Romaine with Basil Goat Cheese Balsamic Dressing
WHAT YOU’LL NEED:
Salad:
Head of Romaine, halved lengthwise
High burn temp oil like Grapeseed
Salt & Pepper
1 Fresno Pepper, thinly sliced
2 TBSP crumbled goat cheese
Optional: grilled bell pepper and/or onion, roasted corn, or really any veggies you like!
Basil Goat Cheese Balsamic Dressing:
2 TBSP EVOO
1 TBSP Balsamic Vinegar
1 TSP Lemon Juice
1 TSP Garlic Paste
1 TSP Basil Paste
1 TBSP Goat Cheese Crumbles
Salt & Pepper to taste
How To Make It:
Lightly brush the halved heads of romaine in grapeseed oil and sprinkle with S&P
Grill, face down first for a few minutes on indirect grill heat, flip to back side for 1 minute then remove from grill and set aside
Whisk together dressing ingredients in a small bowl
Drizzle dressing over grilled romaine
Top with sliced fresno pepper & goat cheese crumbles
Optional—top with other grilled veggies or roasted corn to bulk it up, but it’s really lovely in it’s simplicity with just the fresno and goat cheese too!
