Spinach Artichoke Dip
What You’ll Need:
2 cans artichoke hearts, rough chopped
1 box frozen chopped spinach, cooked and drained
½ cup mayo (Duke’s if possible, cause Duke’s)
½ cup sour cream
2 tbsp minced garlic
2 cups shredded cheddar cheese
2 cups shredded pepper jack cheese
1 tsp red pepper flakes
S & P to taste
How to Make It:
Preheat oven to 375° F
Combine diced artichokes, mayo, sour cream, spinach, S&P, garlic, and red pepper flakes in a large bowl
Mix to combine, adding 90% of your shredded cheese
Transfer mixture to an oven-safe baking dish, evenly spreading out before topping with the remaining shredded cheese
Bake for 20 minutes
Broil for 1-2 min until the cheese is lightly browned
Let sit for at least five minutes before serving
Serve with tortilla chips, pita chips or crusty bread
