Spicy Peanut Noodles with Jalepeño Lime Ground Turkey & Veggies
What You’ll Need:
For peanut sauce:
2-3 heaping tbsp creamy peanut butter
1 tsp sesame oil
¼ cup low sodium soy sauce
1-2 tbsp sambal
2 tbsp rice wine vinegar
1 tsp garlic paste
1 tsp ginger paste
1 tsp sriracha
For Ground Turkey:
1 lb ground turkey
2 tbsp jalapeño paste
1 tbsp EVOO
2-3 tbsp lime juice
For Veggies:
1 head broccoli
1 red bell pepper
1 large yellow onion
1 fresno pepper
3 large carrots
1 tbsp minced garlic
2 tbsp EVOO
For Noodles:
1 box rice noodles (cook according to box instructions)
How to Make It:
For peanut sauce, whisk together ingredients. Adjust the soy sauce and PB ratios to desired consistency
Cook veggies, sautéing ingredients together in a skillet for 7-8 minutes
Cook ground turkey, browning jalapeño and turkey together in a pan. Add lime juice half way through.
Boil rice noodles according to directions on box
Combine peanut sauce, turkey, veggies, and noodles together in a large mixing bowl
Top with fresh chopped scallions and sesame seeds
