Spicy Peanut Noodles with Jalepeño Lime Ground Turkey & Veggies

Peanut Noodles

A seemingly daunting preparation, this meal comes together quickly and delivers a spicy-sweet weekday delight. Make sure that you prep and, after cooking it once or twice, you’ll get this recipe down to thirty minutes or less.

What You’ll Need:

For peanut sauce:

  • 2-3 heaping tbsp creamy peanut butter

  • 1 tsp sesame oil

  • ¼ cup low sodium soy sauce

  • 1-2 tbsp sambal

  • 2 tbsp rice wine vinegar

  • 1 tsp garlic paste

  • 1 tsp ginger paste

  • 1 tsp sriracha

For Ground Turkey:

  • 1 lb ground turkey

  • 2 tbsp jalapeño paste

  • 1 tbsp EVOO

  • 2-3 tbsp lime juice

For Veggies:

  • 1 head broccoli

  • 1 red bell pepper

  • 1 large yellow onion

  • 1 fresno pepper

  • 3 large carrots

  • 1 tbsp minced garlic

  • 2 tbsp EVOO

For Noodles:

  • 1 box rice noodles (cook according to box instructions)

How to Make It:

  1. For peanut sauce, whisk together ingredients. Adjust the soy sauce and PB ratios to desired consistency

  2. Cook veggies, sautéing ingredients together in a skillet for 7-8 minutes

  3. Cook ground turkey, browning jalapeño and turkey together in a pan. Add lime juice half way through.

  4. Boil rice noodles according to directions on box

  5. Combine peanut sauce, turkey, veggies, and noodles together in a large mixing bowl

  6. Top with fresh chopped scallions and sesame seeds
